FLAT IRON STEAK

Spaghetti Alle Vongole

INGREDIENTS

– 2 large cloves garlic, finely chopped
– 1 small dried red chili pepper, crushed, or a pinch of red pepper flakes
– 1/3 cup olive oil
– 3 pounds small hard shell clams
– 1 cup clam juice
– 1 cup dry white wine
– Salt
– 1 pound spaghetti or linguine

DIRECTIONS

– Warm the garlic and chili pepper in the olive oil in a large saucepan. Warm for about 1 minute until the garlic is golden brown.
– Add the clams, clam juice and wine. Cover and simmer over medium heat until all of the clams open.
– In a large pot, boil salted water and add the pasta, cooking and stirring until cooked al dente.
– Drain the pasta and transfer to a large bowl.
– Add the clam sauce and parsley to the large bowl of pasta.
– Toss well and serve immediately.

BLACK COD

INGREDIENTS

– 1 to 1 1/2-pounds skinless black cod fillets
– 1/4 cup sake
– 1/4 cup rice vinegar
– 1/4 cup canola oil
– 2 tablespoons soy sauce
– 1 tablespoon minced fresh ginger
– Dark sesame oil, for garnish
– 3 green onions, thinly sliced on the diagonal, for garnish
– 1 tablespoon toasted sesame seeds, for garnish

DIRECTIONS

– Mix the sake, rice vinegar, canola oil, soy sauce and ginger in a large sauté pan over medium to medium-high heat. Bring to a simmer.
– Add each fillet to the pan.
– Baste the top of each fillet until you see the flakes of the fillet separate a little. This should take about 30 seconds to 1 minute per fillet.
– Simmer for 3 to 6 minutes (based on fillet thickness).
– Then, gently move and plate the fish.
– Turn up the heat on the sauce to boil for 1 minute. Stir constantly to reduce the sauce.
– As desired, spoon the sauce over each fillet.
– Drizzle a little bit of sesame oil over each fillet.
– Garnish with the green onions and toasted sesame seeds and serve immediately.
– As desired, spoon the sauce over each fillet.

FLAT IRON STEAK

INGREDIENTS

– 1 1lb beef flat iron steak
– Salt
– Freshly ground pepper
– 2 tablespoons extra-virgin olive oil
– 6 garlic cloves, minced
– 4 scallions, ch opped
– 4 bay leaves, broken into pieces
– 2 lemons, very thinly sliced
– Vegetable oil, for brushing the grill

DIRECTIONS

– In a glass-baking dish, season the steak with salt and pepper and rub with olive oil.
– Spread the garlic, scallions and bay leaves over the steak.
– Cover both sides of the steak with lemon slices.
– Cover and refrigerate for up to 24 hours.
– Remove from the refrigerator, scrape off the seasonings and bring the steak to room temperature.
– Season with salt and pepper.
– Grill over moderately high heat until medium-rare (about 4 minutes per side).
– Transfer to a carving board and let rest for 5 minutes.
– Thinly slice across the grain and serve.
